His father Rabbi Naftali Zvi Hirsch Shor was a French Rabbi who was a paternal descendant of Joseph ben Isaac Bekhor Shor, and a maternal descendant of Rashi. His mother Rivka Shachna was the daughter of Shalom Shachna. In his early years Ephraim learnt Halakah under the supervision of his father. He married Hanna Wahl Katzenallenbogen who was the daughter of the alleged "1 day King of Poland", Rabbi Saul Wahl Katzenellenbogen. In his mid thirties Ephraim moved to Lublin were he acted as the cities Maggid. Around 1600 he wrote his magnum opus Tevu'ot Shor which dealt with laws of koshrut and the proper halakahic ritual slaughter of animals.Ephraim died on 2 October 1663 in Lublin, and was buried in Lviv, Ukraine.  textהרב אפרים זלמן שור (נפטר בכ"ח בתשרי ה'שצ"ד (1633)) היה מגדולי הרבנים בפולין. נודע כמחבר "תבואת שור" שהוא קיצור הבית יוסף וכראב"ד בריסק ולובלין. מצאצאי רבי יוסף בכור שור. אחיו היה הרב אברהם חיים שור. אביהם היה הרב נפתלי הירש שור שכיהן כראב"ד בריסק ולובלין, היה תלמידו של הרמ"א ורבו של הב"ח. הרב אלכסנדר סנדר שור היה צאצא של אח אחר, הרב שמואל שור. נשא לאישה בגיל 70 את מרת הנלי, בת הרב השר שאול וואהל, שהולידה לו את הרב יעקב שור שנודע כראב"ד בריסק. היא הייתה מיועדת בתחילה לרב אברהם יהושע השיל מקראקא שהיה אז בבריסק. אך הרב וואהל התנגד כי לא החשיב אז את ר' השיל לגדול כל כך, ואמר שבתו מיועדת לגדול יותר. אנשי בריסק כעסו על זה מאוד, וכמה מהם באו לפני מלך פולין שאשתו מתה באותו הזמן, ושבחו בפניו את היהודייה הבתולה בת השר החשוב. המלך נתן צו לחטוף אותה ולהביאה אליו. באותו הזמן היה ה"תבואת שור" רבה של בריסק ואביה פנה אליו וסיפר לו את השתלשלות העניינים וביקש ממנו למהר לשאתה לאישה וכך עשה הרב אפרים זלמן. בתחילה כיהן בראב"ד שברשין, ולאחר פטירת חותנו הרב שאול וואהל, נבחר לרבנות בריסק והקים שם ישיבה. ספרו הודפס בלובלין ה'שע"ה-ה'שע"ו. תשובות שלו נמצאות בשו"ת הב"ח סימן ק'; בשו"ת "פני יהושע", חלק אבן העזר, סימן ט"ו; ותשובות אחרות היו בכתב יד בידי הרב פנחס מיכאל גרויסלייט בתוך 'שו"ת "גאוני קדמאי"'. הרב גרויסלייט פרסם בספרו "דברי פנחס" חידושים מבנו של הרב אפרים זלמן, הרב יעקב. על מצבתו נחרת: "אראלים ומצוקים... פשטו ידם באיש האלוקים, רבנו וגאוננו נר ישראל, ראש גאולת ישראל..." ולמרגלותיו נחרת על המצבה: "הגאון הגדול נר ישראל מוהר"ר אפרים זצ"ל נקרא זלמן שור..."
